This delicious sausage tomato pasta sauce is by far one of my favourite meat sauces that I can quickly put together on a busy week night or laid-back Sunday evening. With it’s rich and creamy texture and packed with so much goodness, it’s such a comfort food. Perfect for this time of year!

Italian Sausage & Tomato Pasta
With a rich and creamy texture, this delicious Italian sausage and tomato pasta is easily a favourite for busy nights and laid-back weekend dinners alike.

Ingredients
- 1 lb pork sausage meat
- 1 onion, medium
- 2 medium tomatoes peeled
- 1 cup tomato purée
- 1 tbsp tomato paste
- 1 cup water or veggie stock
- 1 cup white wine
- 1 tbsp heavy cream
- 2 garlic cloves, minced
- 1 tbsp Italian seasoning
- 1 tsp pepper flakes, optional
- ½ cup Parmesan cheese
- 2 tbsp olive oil, extra virgin
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- In a no-stick pan heat olive oil, then add finely diced onions and garlic and cook until soft and aromatic for about 5 minutes
- Add sausage meat (casing removed) to the pan and fry for about 10 minutes until cooked through
- Stir in tomato paste, Italian seasoning, salt, pepper and pepper flakes (this is optional, if you want it spicy)
- When the meat starts to turn golden, pour white wine and cook for another 2-5 minutes allowing the alcohol to completely evaporate
- Pour tomato purée, water or veggie stock and simmer down for about 40 minutes until the sauce has reduced
- Add heavy cream and simmer for 10 more minutes
- In the meantime, bring a large pot 3/4 filled with salty water to a boil and cook your pasta according to the instructions on the package
- Add a lot of Parmesan cheese on top to serve
